Simple and Low-Carb Cheddar Tortilla Chicken Fajita Tacos




Being of Mexican heritage always bummed me out while dieting because tortillas are a big part of my diet and Taco Tuesday is really a thing! Living a Carnivore diet meant having to miss out on tacos until I discovered this recipe

Taco Tuesday Without The Guilt

The recipe is very simple and the results are delicious as the taco (when toasted) tastes just like a Cheese It! Or, one can add Doritos Ranch or Nacho seasoning and you have yourself a Doritos Locos Taco without the guilt!


Simple and Low-Carb Cheddar Tortilla Chicken Fajita Tacos


Ingredients


  • 2 - 3 cups of fresh shredded cheese of your choice

  • 1 Package of Chicken Thighs or Breasts

  • 2 tbsp Olive Oil

  • 1 cup of chopped Spinach

  • 1 diced Tomato

  • 1 sliced Avacado

  • Salt and Pepper (to taste)

  • 1 tbsp of Taco Seasoning (optional)


Directions


Prepare your chicken. Cut off any excess fat and season with salt, pepper and optional taco seasoning. Heat pan on medium low heat and add olive oil, once heated, add chicken. Cook 4 minutes per side covered.



While the chicken is cooking, shred 2-3 cups of the cheese of your choice and we'll also chop tomatoes, spinach, and avocado. Remove the chicken from the heat and let rest 5 minutes then chop the chicken fajita style.





In a small pan, heat to medium without oil (oil is not needed) Once the pan is heated, add enough cheese to cover the pan (measure with your heart!)



The cheese needs to melt enough to become crisp on one side but not burnt. When it looks like the photo above, flip over for approx. 30 seconds and remove from heat. I set up a wooden spoon over two cups and I use that to shape the taco shells and it lets the cheese oil to drain off. Do this for as many taco shells you need.



Next comes the best part of Taco Tuesday, assembling the Tacos! Add the chicken, and all of your veggies and enjoy a low carb treat that is not only crispy but delicious too!
