Delicious Traditional Sheppard's Pie For St. Patrick's Day!




I've loved this dish and I've had it all over the country but it seems like every restaurant uses beef instead of Lamb and I wanted a traditional version and you know what they say...Sometimes you have to do it yourself.

Ever Since I've Learned This Recipe, I've Obsessed Over It!

St. Patrick's Day falls on a Friday during Lent and (depending on your diocese) our bishop has given us Dispensation, Sheppard's Pie is perfect to celebrate the holiday!


Delicious Traditional Sheppard's Pie For St. Patrick's Day


Ingredients

  • 2lbs Ground Lamb

  • 2 tbsp of fresh Thyme, Rosemary, Parsley chopped and combined

  • 2 Egg Yolks

  • 2 Cups Fresh Grated Parmesean

  • 1lbs of Potatoes (peeled and chopped)

  • 5 tbsp of Tomato Paste

  • 1 cup Red Wine

  • 2 cups Beef Broth

  • Salt and Pepper to taste.

Directions


Brown 2lbs of ground lamb to a heated pan with a few tbsps of olive oil, salt and pepper the lamb to taste. While the lamb is browning, chop your veggies. Chop your rosemary, thyme, and parsley and combine together.



We will also be peeling and boiling our potatoes while the lamb browns. You want to be sure to peel all of the skin and boil the potatoes until they are tender.


Once the lamb is browned, drain the lamb and place it back on the burner. Add the herb combination and stir in the tomato paste along with the chopped veggies. Once Well mixed, add the red wine and reduce. Finally, add the beef stock into the pan when the wine is reduced, cook for 2 more minutes then transfer to a baking dish.



When the potatoes are tender, drain and add to a large mixing bowl and begin mashing!! Add the butter, salt and pepper, two egg yolks (not whites, save that for breakfast!) and a cup of fresh grated parmesan cheese. Once its well combined, add a splash of milk to keep the consistency creamy.



Spread the potatoes evenly and as smooth as possible to make the traditional design (which is optional but why not?) I like to take a fork and just lightly press down and pull across, back and forth until I've done all of the real estate.



Finally, grate some parmesan cheese (just a small layer) to crisp the top or do an egg wash. Place into a pre-heated oven at 375 for 25-30 minutes or until the top is golden brown. This recipe seems like an intimidating dish but the secret is organization and you will have a dish that will impress any guest!
