Effortless and Tasty! Crispy Dijon Mustard Salmon Lent Recipe To Keep Cravings Away on Fasting Days





It’s that wonderful time of year where we, as Catholics, decide what to give up for Lent. For the next 40 days we will honor a covenant with God and do our best to abstain from a personal vice so that we can become closer with Jesus.


I think it’s beautiful to give up something that you love and something I love very much is bread. I gave up bread permanently last year and my health has improved immensely! So much so, that I want to share the tasty and healthy recipes I’ve discovered to keep myself away from bread.


This week recipe: Crispy Dijon Mustard Salmon and Rice.


Ingredients

1 Salmon Fillet

2 Tablespoons of Avocado Oil

1 cup Uncooked Rice

2 Cups Water

2 Tbsp Dijon Mustard

1 Lemon or Lime

Salt and Pepper (to taste)

If you don’t have a rice cooker, then become one! Boil 2 cups of water, then add the rice. Cover and simmer on low until all the water is evaporated. Then, remove from the heat and leave covered for 5 minutes then fluff rice. Add butter, salt, and pepper for a savory finish.



For the main dish, take your knife score the scale side of your filet of salmon, this allows the fillet to cook much faster. Salt and pepper both sides of the fillet to taste.


Next, add 2 heaping tablespoons of Dijon mustard to the meat side coating the top and edges generously.



Place sauté pan on medium heat, add 2 tablespoons of avocado oil. Once hot, place salmon Dijon Mustard side down first! This will create the crunchy crust on your Crispy Salmon. Let cook for 3-4 minutes, then flip to see the Mustard side up.


Immediately after flipping, add lemon or lime zest and don’t forget to squeeze the fresh fruit juice onto the fish. Cover for 4-5 minutes.



Remove salmon from the pan once the fish becomes flaky! Let salmon rest 5 minutes.


Plate your Crispy Salmon and rice. Add some more of your citrus zest to bring out the colorful flavors in the mustard crust. Finally enjoy with a wine spritzer. Add one part blush wine, one part lemon lime soda over ice, garnish with matching citrus
